Shelter From the Storm Boot Camp

I am participating in BootCamp for Shelter from the Storm to raise money in support of local shelters and programs that help women rebuild their lives. I’m hoping that you’ll join us April 30th for one hour. You can join our team, start your own team, or go in as an individual by following this link.

Hi there!
This event strikes close to home for me as an abuse victim myself that got both myself and my child out of the situation. I know it’s hard and I know what its like to have friends and family utter behind my back “why doesn’t she just get out?” but its not that simple and I know that. It took in my situation, the police showing up at my door on a Monday morning telling me they were escorting me down to the courthouse to press charges, they had responded the night before. I went with them SHAKING but the one held my hand the whole time. Shortly after, I was out of the relationship, terrified because I was now a single mother with no income but I got through it. I have put myself through school to make a better life for myself and my son.
If you or anyone you know is in this situation all I can say(in my opinion as an abuse victim) please just be there to support them for as long as they are in that relationship and when they get out, let them cry as long and as hard as they want. It’s what my friends did for me!

Delicious Pumpkin Spelt Muffins!!!!

Hey everyone!!! What is the most googled thing on the planet? RECIPES!! So I thought for my first official blog I would do a muffin recipe that I just made!!! I am NOT a baker by any means. Measuring stuff is not my thing. If I could make a cake with a dash of this, and a pinch of that, believe me, I would. But these muffins are awesome!!!! EASY and DELICIOUS…and NOT DRY!!!!!!! Give them a shot!
PUMPKIN SPELT MUFFINS (you can use regular flour, but I am a gluten-free gal)
Here’s what you need!
3 eggs
1 cup of brown sugar
1 cup of white sugar ( I always cut this in half!)
1 1/2 cups of buttermilk
1 1/3 cup of ground flax (optional..but yummy)
3 tsp baking soda
3 tsp baking powder
1 tsp salt
tin of pumpkin (big tin, 796 ml)
1/4 cup light olive oil (or any oil I guess)
3 cups spelt flour (or whole wheat)
1 1/2 -2 tsp of cinnamon
3/4 tsp ground ginger
1/2 tsp ground cloves
Combine the eggs, sugar and pumpkin
THEN add oil ( you can even omit the oil!)
THEN add the buttermilk
In ANOTHER bowl, mix the dry ingredients…flour, salt, powder, soda sugar, flax…)
NOW you add, ALL AT ONCE, the liquid TO the dry. Mix until moistened all the way through. (don’t over mix)
Put all the mix in the sprayed or buttered or lined muffin tin(s) and bake at 375 for 20-25 minutes!!!!!
YUMMY! Great and healthy snack for babies and kids and you too!!!
