I meant to give this recipe to you yesterday, but I couldn’t log on from home, so even though it’s a day late, here it is!
BBQ Salmon with tomato and wine sauce
Cut up some fresh tomatoes along with garlic, black olives, fresh oregano and a couple of round lemon slices and a good splash of white wine.
Place all of the above (including a salmon fillet) inside a tin foil pouch and place on the top grill of a med-high heated bbq.
Let cook for 15-20 min.
Place salmon and sauce on plate and serve with wild rice.
